Culinary Program at Booker T. Washington Sr. High School in Miami

HAPCO is proud to partner with the culinary program at The Historic Booker T. Washington Sr. High School in Miami. Tomorrow, Chef Darren Thompson will teach a master class to the program’s students.

Mrs. Melanie Fleary has led the school’s culinary program for 20 years. By partnering with working chefs, she teaches her students the many different avenues they can take to be successful. Chefs share techniques as well as entrepreneurial experiences.

The school’s Academy of Hospitality Tourism & Culinary Arts teaches students trades from top industry pros. Students can obtain their ServSafe managerial food safety certification, earn dual enrollment credits, work at paid internships and receive job placement assistance.

Chef Darren Thompson is a culinary artist renowned for his innovative approach to modern gastronomy. With over 10 years of experience in the culinary world, he has honed his skills with some of the finest chefs in America.

He began his career in Orlando, where he was quickly recognized for his talent and creativity. His passion for sourcing local and sustainable ingredients shines through in every dish he creates.

Darren is a descendant of Southern African American culture and Caribbean lineage. His culinary roots stem from the South of France to New Orleans. The combined cuisines of these regions shine through in his culinary creativity.

When not in the kitchen, Darren enjoys exploring farmers’ markets, writing about food, and experimenting with flavors at home with his family. His philosophy revolves around the belief that food should be both delicious and a celebration of culture and community.
